Ingredients:
1 oz Ketel One Vodka
12 oz Strucchi Red Bitter (Campari-style liqueur)
12 oz Strucchi Bianco Vermouth
34 oz Lemon juice (freshly squeezed)
12 oz Raspberry (framboise) sugar syrup
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist and raspberry.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.
  6. Express lemon zest twist over the cocktail and discard.
  7. Garnish with raspberry floated in centre of cocktail.

Maybe it's just my wet palate, but wow, I think this is better than the standard Clover Club! Not that the latter isn't good, it's one of the all time greats if anything. But the Campari and the vodka allowing it to shine just results in a magnificent drink replete with fruity citrus and fresh raspberry.

My house raspberry syrup is pressed juice with cane sugar. My 'bianco' is always Cocchi Americano. I'm forever skeptical of drinks with vodka in them. The Cocchi kind of makes up for the absence of gin botanicals. This is actually a tasty and distinct variation of a Clover Club. Great job, Anders.

Didn’t have raspberry syrup so subbed 8-9 fresh raspberries and reduced sugar syrup to 10ml to improve balance for my taste. Very happy! The Campari adds depth but is scarcely discernible, for those who aren’t big Campari fans, try this with confidence!
