Serve in a Coupe glass

Ingredients:
2 oz Caribbean blended rum aged 6-10 years
12 oz Lime juice (freshly squeezed)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
4 drop Bob's Vanilla bitters optional
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lime wedge.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with lime wedge.

Review:

Traditionally a Daiquiri should always be based on light rum but if I should feel like breaking with tradition and using aged rum, I find Embury's 8:2:1 formula works particularly well with a sweet aged rum. However, with drier aged rums, depending on the sourness of the limes, I up the sugar from 7.5ml (representing 1 part from the 8:2:1 formula) towards 10ml (as in the recipe above). So, depending on your rum and limes, 12:3:2 may be better than 8:2:1.

History:

According to David A. Embury's 1948 The Fine Art of Mixing Drinks, the classic proportions of a daiquiri are 8 parts (2 shots) white label Cuban rum, 2 parts (1/2 shot) lime juice and 1 part (1/4 shot) sugar syrup.

A rum lovers version of daiquiri - a great cocktail. Rum dominates the ratios, so PICK A RUM YOU LIKE!! A funky Jamaican; a smooth, aged blend; or a unique, barrel-aged specialy - any of those should do well with the slightly sweet and citrusy background. I don't really like using a mild, white rum here since I don't think this type stands up well on it's own.

Rum was my first alcohol I began drinking nearly 50 years ago, and it still is my favourite. We have, at least, 20 different rums, but prefer those from Barbados, Jamaica, Haiti, or Martinique.
This was excellent. Great flavour with the rum being forward, but still very refreshing.

Made with a 5 year old rum from Belize. Sipping this on a December evening, my wife said, “I think of daiquiris as being a beach drink, but this has a nice wintry quality.”
