Serve in a Coupe glass

Ingredients:
1 13 oz Rutte Old Simon Genever
23 oz Cointreau triple sec liqueur
12 oz Lemon juice (freshly squeezed)
13 oz Honey syrup (3 parts honey to 1 water by weight)
16 oz Torabhaig Peated Single Malt Whisky
13 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of orange zest twist.
  3. SHAKE all ingredients with ice.
  4. STRAIN back into shaker.
  5. DRY SHAKE (without ice) to emulsify.
  6. FINE STRAIN into chilled glass.
  7. EXPRESS orange zest twist over the cocktail and use as garnish.

Review:

Genever provides a bready spirituous base while triple sec adds a zesty citrus bite to this honey sour. In keeping with its Anchor name, peaty malt and saline solution add a subtle marine element.

History:

Inspired by De Kuyper's anchor in a heart logo, I created this cocktail in March 2020 for De Kuyper Royal Distillers' 325th anniversary. However, the COVID-19 pandemic scuppered De Kuyper's anniversary celebrations, so this cocktail stayed in my notes until April 2024, when I was looking for a cocktail to honour the retirement of Mark de Witte, CEO of De Kuyper Royal Distillers. I've been lucky enough to have counted Mark as a friend since I met him in 2013. Happy retirement, Mark.

Loved it, though messed up the egg foamy part on the first try. Tried again and it was a lovely refreshing treat. Bravo!
