1 1/2 fl oz Rubino/Rosso/Rojo (sweet, fruity) vermouth
5/6 fl oz Lustau Palo Cortado Península Sherry
2/3 fl oz Strucchi Dry Vermouth
1/3 fl oz Amaro Santoni
2 dash Orange Bitters by Angostura

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of orange zest twist.

Method

  1. STIR all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish

  1. EXPRESS orange zest twist over the cocktail and use as garnish.

History

Adapted from a recipe created by Simone Caporale and Marc Alvarez at Sips in Barcelona and served at the Amaro Santoni takeover of Double Chicken Please in Manhattan in July 2024. Their original recipe calls for 45ml Martini Rubino vermouth, 25ml Palo Cartado, 20ml Noilly Prat Extra Dry vermouth, and 10ml Santoni.

Review

Delicious and reminiscent of a fortified bittersweet red wine with zesty orange notes.

Lovely complexity here. But we had to do some work-arounds: the only sherry we had was a bold aged dry flor so we reduced that to 15ml; and lacking the Amaro Santoni we substituted 7.5ml Amaro Nonino Quintessentia and 2.5ml Campari; and we increased the orange bitters to three dashes. If this is anywhere near ballpark what the creator intended, well, we say bravo.

Tried this with Campari in place of the amaro santoni. Very pleasant. Surprised at the dominance of fruit notes. Glad I splurged on a nice Palo Cortado bottle! Will make again.
