Serve in a Coupe glass

Ingredients:
34 oz Caribbean blended rum aged 6-10 years
34 oz Amaro Nonino Quintessentia
34 oz Bittersweet orange-red aperitivo
34 oz Lemon juice (freshly squeezed)
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of paper boat (&/or lemon zest twist).
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with paper boat pegged to rim (&/or lemon zest twist).

Review:

There are numerous rum-based riffs on Sam Ross' Paper Plane, some served tall with added juices and syrups, but at its simplest (as here), a Paper Boat is a Paper Plane made with aged rum in place of bourbon. The result is bittersweet and delicious.

As much as the simpler original is delicious, I also decided to make a version with Gran Classico and Cynar, along with Appleton 12 and lime juice. Rather far enough from the Paper Boat to be a different drink, but quite tasty nonetheless. The rum stands up to the liqueurs, and there is a lot of depth and complexity.

Really enjoyed this, but agree with comment below that it lacks a bit of body, not that this is necessarily a bad thing; this would be an excellent summer sipper. I used Mount Gay XO rum and Aperol but think next time I will try using Campari and cut down on the saline to up the bitterness.

This charming cocktail invites experiment. The Nonino, as recommended, makes for a subtly sweet, perfectly balanced drink. But if you are after more of an Amaro sour, we think Ramazzotti and Nardini make wonderful alternatives.

Made this with Mount Gay Black Barrel as the blend involves rums aged 6-10+ years and is aged in both bourbon and charred barrels which I think gave the cocktail a really nice nod to the Paper Plane. Really fantastic. Definitely try this.

I used El Dorado 8 and it's very nice. The rum adds a cola note to the cocktail that I don't find in the Paper Plane. I do miss the body that bourbon gives though. Next time I'll probably add a rum with some funk to it and see if that can take it further from the PP whilst also adding body.
