Ingredients:
1 12 oz Hayman's London Dry Gin
1 12 oz Lustau Amontillado Los Arcos Sherry
0.08 oz White balsamic vinegar
13 oz Maple syrup
2 dash Angostura Aromatic Bitters
2 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of skewered Fragata Green Olive.
  3. STIR all ingredients with ice.
  4. STRAIN into chilled glass.
  5. Garnish with skewered olive.

Adapted from a recipe created by María Piscopo at Madrid's 1862 Dry Bar, where we discovered this as the second on the bar's "signature" cocktails menu in January 2025.

Had to improvise: Beefeater; had no Amontillado so used Lustau Oloroso (1/2) & PX (1/2); a fig/vanilla balsamic and birch syrup in place of maple. Anxious to make one true to the recipe, but this one was outstanding--lush and balanced.
