Ingredients:
1 oz Hayman's London Dry Gin
34 oz Strucchi Red Bitter (Campari-style liqueur)
34 oz Rubino vermouth
12 oz Crème de noyau liqueur
13 oz Cherry juice
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of skewered Luxardo Maraschino Cherry.
  3. STIR all ingredients with ice.
  4. STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).
  5. Garnish with skewered maraschino cherry.

History:

Adapted from a recipe called "Sour Cherry" created in 2023 by Ciarrai Kelly and Adam Montgomerie at Hawksmoor in Manhattan, New York City. Adam's recipe is soured with 5ml of acid-adjusted cherry juice made with 700g cherry juice, 15g malic acid and 30g citric acid. My version is more bittersweet cherry and Negroni-like, hence the change of name.
