1 fl oz	Chinola Mango Liqueur
³⁄₄ fl oz	Lemon juice (freshly squeezed)
¹⁄₄ fl oz	Honey syrup (3 parts honey to 1 water by weight)
¹⁄₂ fl oz	Egg white (pasteurised) or 3 dash Fee Brothers Fee Foam cocktail foamer
6 drop	Ginger bitters (optional)
3 drop	Saline solution (20g sea salt to 80g water) or merest pinch of s

How to make

Prepare

Select and pre-chill a DOUBLE OLD-FASHIONED GLASS.
Prepare garnish of mango wedge.

Method

SHAKE all ingredients with ice and strain back into shaker.
DRY SHAKE (without ice) to emulsify.
FINE STRAIN into ice-filled glass.

Garnish

Garnish with mango wedge.

A great Mango Sour. I made a mango liqueur using a mango maceration in vodka and Wray & Nephew. You definitely could feel the spirit of the Bourbon and lemon as well.

Great stuff, 4.5! My cabinet only offered Vedrenne’s Liqueur de Mangue, but that worked well. Chinola Mango Liqueur is not available in this country (Sweden).
