Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of skewered green olives.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

History

Adapted from a cocktail created by Tim McCarthy at Hawksmoor Guildhall, London. The Tom & Jerez remains one of the restaurant chain's "The Sacred Six", and we discovered it in 2025 at Hawksmoor Manchester, where it was promoted as "Spain in a glass."

Review

A dry sherry and pear sour laced with old tom gin and enriched with almond syrup. The garnish is a savoury distraction from the sweet and sourness.

A bit underrated at 4 stars for my money! Old Tom and manzanilla is a great combination, and this is my favourite version of the pairing so far. Love the little hint of brine from the olives and the smooth note from the orgeat.
