How to make:

SHAKE all ingredients with ice and fine strain into ice-filled glass. CHURN (stir) with bar spoon. Fill glass with more crushed ice and CHURN some more. Keep adding ice and churning until drink fills glass. Serve with straws.

Review:

Mastiha adds a distinctively Greek fresh flavour to this otherwise fairly classic mojito.

Increased the recipe by half only to discover I had two thirds the mastiha needed. Made up the difference with gin, added a spoon each of rich syrup and additional lime juice with excellent results.

Made with freshly cut garden mint, Plantation 3 Stars, and Tetteris mastiha. Cut the lime back to 1/2 Oz., and replaced some of the ice with about 3 Oz. of Perrier. A nicely refreshing drink, with the mastiha adding a less-usual twist to a well-worn formula
