| 1⁄3 fl oz | Monin Hot Honey Syrup |
| 1⁄3 fl oz | Honey syrup (3 parts honey to 1 water by weight) |
| 1⁄2 fl oz | Egg white (pasteurised) or 3 dash Fee Brothers Fee Foam cocktail foamer |
| 2 dash | Angostura Aromatic Bitters (optional) |
| 2 drop | Saline solution (20g sea salt to 80g water) or merest pinch of s (optional) |

Serve in a Sour or Martini/Coupette glass
Prepare
- Select and pre-chill a SOUR OR MARTINI/COUPETTE GLASS.
- Prepare garnish of lemon zest twist and drops of aromatic bitters.
Method
- SHAKE all ingredients with ice and strain back into shaker.
- DRY SHAKE (without ice) to emulsify.
- FINE STRAIN into chilled glass.
Garnish
- EXPRESS lemon zest twist over the cocktail and discard.
- Garnish with drops of aromatic bitters drawn through the foam head.
