Serve in a Coupe glass

Ingredients:
1 12 oz Hayman's London Dry Gin
23 oz Cointreau triple sec liqueur
12 oz Gentian liqueur (e.g. Suze, Salers etc)
56 oz Lemon juice (freshly squeezed)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. EXPRESS lemon zest twist over the cocktail and use as garnish.

History:

Adapted from a recipe created in 2017 by Dom Saunders and Simone Nelli at Cinnamon Club in London, England. (I took the liberty of adding egg white to their recipe.)

My appreciation of Suze is very much a work in progress. I'd struggle to say I enjoy it but I defintely find it interesting and seem to have got through most of a bottle normally having it with tonic. This cocktail works fantastically is definitely another step towards total acceptance of Suze!

I made this having just enough Cointreau and Suze left to pull it off. The specs to me sounded too sweet, and I felt it was, despite the bracing bite of the Suze. The flavor balance is on point. It might just be a case of dialing down the simple to 7.5 ml. Tough to say, considering the interplay and dominance of acidic citrus and gentian in the aftertaste. Nonetheless, this is going into my catalog. (24 Jun 2023, 10:06a)

This is a lovely, well-balanced bitter cocktail. The addition of egg white is a nice touch, the silky texturing contrasting well with the sharper, herbal flavours.
