Devil Woman Cocktail Recipe

Ingredients
2 fl oz	Light white rum (charcoal-filtered 1-4 years old)
1/6 fl oz	Lemon oleo saccharum (homemade)
1/6 fl oz	Martini Riserva Speciale Bitter
1/6 fl oz	Strucchi Dry Vermouth

How to make

Glassware

Prepare

Select and pre-chill a COUPE GLASS.

Prepare garnish of hibiscus pickled onion (In a jar of pickled onions, add 50g of dried hibiscus flower to each litre of vinegar and infuse for 3 hours. Double strain vinegar to remove flowers and return to jar.).

Method

STIR all ingredients with ice.

STRAIN into chilled glass.

Garnish

Garnish with hibiscus pickled onion.

Adapted from a recipe created by Ana Alicia Herrera at Pal Real in Guadalajara, Mexico. This was the Mexican Bacardí Legacy 2018 winning cocktail.

The inspiration comes from something I learned in New Orleans when I first became a bartender. Devil Woman is a new twist on a classic Gibson Martini.

To say that we seldom enjoy a Martini would be an understatement. But this one caught our eye. For the bitter, we used Tempus Fugit which, perhaps, introduces just a hint of fruitiness. The garnish, as specified, was a bridge too far so we simply floated a Rose petal. There's really lovely balance and complexity here.

I grew up by the sea, on the Costa Branca (as the early Portuguese navigators are reputed to have referred to it). A Mediterranean climate. Everyone had a lemon tree in their garden. That sort of thing can become a part of one's DNA.
