Serve in a Coupe glass

Ingredients:
1 slice Cucumber (fresh)
1 13 oz Hayman's London Dry Gin
23 oz Gentian liqueur (e.g. Suze, Salers etc)
23 oz Lemon juice (freshly squeezed)
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba (chickpea water) or Vegan egg white replacement
× 1 1 serving

Garnish: Grind black pepper

How to make:

MUDDLE cucumber in base of shaker. ADD other ingredients, SHAKE with ice and strain back into shaker. DRY SHAKE and fine strain into chilled glass.

History:

Properly named "Suze It Like A Lady", this is a recipe created by Michael Hajiyianni at Ruby, Copenhagen, Denmark. Michael says it is "based on one of the first Gin cocktails I ever had during my early days at The Refectory Bar at The Plymouth Gin Distillery. Swapping out orange liqueur to make a simple savoury twist on the classic White Lady."

This needs adjusting quite a lot. One slice of cucumber is t enough, plus it needs more gin and Gentian liqueur. I went with about 2 inches of cucumber, 60ml of Gin and 40ml of Suze. Then I could taste every ingredient. I also used mixed peppercorns, as each different pepper (white, black, green, pink and red) picked out a different ingredient. It gave it more taste and more oomph.

I will admit that I’m not a fan of Suze, and in this particular cocktail, it seems to me that it’s bitterness overpowers the more gentle flavour of cucumber etc. However, I found that the heat of the black pepper actually paired well with the bitterness of the Suze. But if you like Suze and bitter cocktails, then this may be more up your alley as drink on a hot summer’s day.
