Ingredients:
23 oz Caribbean blended rum aged 6-10 years
23 oz Light gold rum (1-3 year old molasses column)
23 oz Bénédictine D.O.M. liqueur
12 oz Lemon juice (freshly squeezed)
13 oz Chilled water omit if using wet ice
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Nick & Nora glass.
  2. Prepare garnish of lemon zest twist.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. EXPRESS lemon zest twist over the cocktail and use as garnish.

Review:

I find the original four equal parts recipe a tad on the sour side so I like to trim back the citrus and also add a few drops of saline. And as is the case we so many Daiquiri-style cocktails, I like to add a splash of dilution.

Adapted from the Singaporean Bacardí Legacy 2018 winning cocktail created by Sim Sze Wei at Atlas Bar, originally based on Bacardi Ocho Anos and Carta Blanca rums.

Golden Eight is inspired by the hardships and challenges along my journey as a bartender and the untameable spirit of BACARDÍ rum. I am pursuing my belief with passion and determination, innovating a new category of rum cocktail with no homemade ingredients.
