1 1⁄3 oz | O/Purist Tsipouro |
1⁄3 oz | Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup) |
1⁄3 oz | Lime juice (freshly squeezed) |
1⁄2 oz | Sour apple liqueur |
1 dash | Fee Brothers Celery bitters |
2 oz | Fiol Extra Dry Prosecco |
Garnish: Basil leaf
SHAKE all ingredients with ice and fine strain into ice-filled glass. TOP with prosecco and briefly stir.

Adapted from a recipe created by Angelos Oikonomou at Stardust all day bar in Kastoria, Greece, this was one of ten winning recipes in the 2021 O/Purist Quest. Named after the ten Greek bartenders that collaborated to create O/Purist Tsipouro, Angelos says, "The idea was based on the classic "French 75", aiming at marking its own new path as a modern yet simple and delicious cocktail with tsipouro."
