Greece is a nation as famous for its seafaring prowess as it is the Parthenon, so it's perhaps fitting to include Navy rum in this Old Fashioned-style tsipouro-based cocktail from Greek city of Lamia. Vanilla is a brilliant touch in this late-night sipper.
Adapted from a recipe created by Michalis Emmanouil at Degage Bar in Lamia, Greece, this was one of ten winning recipes in the 2021 O/Purist Quest. Michalis says he was inspired by temple of Parthenon in Athens, "built as a temple in honour of goddess Athena, protector of the city as well. In the same way the O/Purist Tsipouro was created by ten successful people from the world of bartending."
