Wanting to utilise the herbaceous lemon flavours of limoncello with the crispness of champagne I stumbled across this wonderfully fresh green number
The herbal complexity leads along a path of sweet and bitter notes, just like heroes' destiny.
Tried to recreate the taste of a lemon meringue pie - which is a good dessert!
Goes down like juice / be warned, you can drink too many of these :-)

Experimenting in my kitchen during the Covid-19 bank holiday weekend... and (IMHO) making very good use on my time! :)
A last word variation. Talks to all your senses: smoky, sweet, tart, bitter, sour. To really let the limoncello shine I increased it's ratio to 30ml.

A cocktail that is nice to drink outside in the sunshine. Not overly sweet or bitter but has that nice balance between both.
