1 23 fl oz Light white rum (charcoal-filtered 1-4 years old)
23 fl oz Ambrato/ambre/amber vermouth
23 fl oz Lemon juice (freshly squeezed)
12 fl oz Sugar syrup 'simple' (1 sugar to 1 water, 48°Brix)
3 dash Fee Brothers Celery bitters

How to make

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of atomiser spray of peated whisky.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish

  1. Using atomiser, spray two spritzes peated whisky over top of glass and one on the side.

History

The British Bacardí Legacy 2018 winning cocktail, by Leon Back of Panda and Sons in Edinburgh, Scotland.

The Queen Street Cocktail is, firstly, a tribute to the street where I work. This street in Edinburgh, which is world-renowned, is where many generations of industry greats have established themselves, enabling them to leave their mark within the industry.

An enigmatic drink, in the best possible way. We went with cane syrup and pulled it back to 15ml. Likewise the celery bitters, we dialled down to two dashes...maybe one might have been enough...perhaps it's just us but a little bit of celery bitters goes a long, long way.

btw if anyone can explain the spritz garnish we'd be grateful. We just added to the mix a gentle dash of peated Islay.

I know this response is quite a bit late, but I use a small atomizer spray bottle for the spritz (I keep these bottles on hand for absinthe, Laphroaig and orange blossom water).
