Ingredients:
2 oz Lustau Amontillado Los Arcos Sherry
12 oz Blended Scotch whisky
12 oz Lemon juice (freshly squeezed)
0.42 oz Monin Pineapple Syrup
1 dash Angostura Aromatic Bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Collins glass.
  2. Prepare garnish of aromatic bitters and pineapple wedge.
  3. SHAKE all ingredients with ice.
  4. STRAIN into glass filled with crushed ice.
  5. Garnish with 2 dashes of bitters to colour ice crown and pineapple wedge.

Adapted from a recipe created by Ryan Fitzgerald and Todd Smith at ABV in San Francisco, USA. (Originally made with 20ml homemade pineapple syrup.)

Can't omit the Ango, but don't be too heavy with it. This recipe most suited me: 45 ml sherry, 30 ml Dewar's, 20 ml pineapple syrup, 7.5 ml lemon juice... Same overall volume, just shifted. You got a better idea?

Not bad but being Angostura Bitter's Birthday, I'm surprised you didn't choose a Trinidad Sour as the cocktail of the day for such occasion ( 1.5 oz/45 mls vs 1 dash of Angostura) ;)

The choice was due to the extra dashes used in the garnish so the aromatics and visual appearance of bitters are made obvious to the drinker.
