Bumping up the gin to 45ml was fine, knocking back the Campari to 22.5 less so. Topped it back up again to get the Campari fruitiness. There’s a reason the classics are the way they are!
For Halloween I tried 1 oz gin and 3/4 oz each of Strega, Martini & Rossi Riserva Speciale Bitter (not quite as puckeringly bitter as Campari), and Dolin Rouge (not as heavy or sweet as Carpano Antica). This lets the Strega come through and results in a more balanced, complex cocktail. A very nice variation on the Negroni, with added anise, mint, and herbal notes instead of just the dominating bitterness of Campari.
Just what the Negroni needed: more bitter complexity. Made it with the exact amounts specified (for a change) using Carpano Antica vermouth. The Strega is getting lost amidst all that Campari; think I'll try it again with a higher proportion of Strega. Very good all the same. An excellent choice for Halloween, even if you can't make it to Benevento in person.
OK, how can you improve on a classic negroni; you can't... Or can you? Perhaps i'm bewitched. I love negronis; all of them. Lordy. Noah could never fit two of all the animals on the ark! There will never be too many negronis. Seriously, this is as good as the classic. A splash of Liquore Strega and some orange rind. (Maybe better.) Five stars and a heart.
