Ingredients:
1 1/2 fl oz Akashi-Tai Daiginjo Genshu sake
1/2 fl oz Belle de Brillet pear liqueur
1/3 fl oz Poire William eau-de-vie
3/4 fl oz Pear juice (freshly pressed)
1/3 fl oz Lemon juice (freshly squeezed)
4 drop Difford's Daiquiri Bitters
2 drop Saline solution 4:1 (20g sea salt to 80g water)

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of pear wedge.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with pear wedge on rim.
