Serve in a Martini glass

Ingredients:
2 oz Hayman's London Dry Gin
12 oz Luxardo Maraschino liqueur
12 oz Lemon juice (freshly squeezed)
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
14 oz Joseph Cartron Double Crème de Cassis de Bourgogne

Garnish: Lemon zest twist

How to make:

SHAKE first 4 ingredients with ice and fine strain into chilled glass. POUR cassis into centre of drink (it should sink).

An Aviation with egg white and a dash of cassis in the bottom but is actually better and more balanced when the cassis is shaken with the other ingredients.

Perhaps then a grounded Aviator. Better with egg, or at least aquafaba.

I added all the ingredients together as suggested in the review. Excellent results.

I’m not sure what I did wrong with this one, but it turned out incredibly chalky.

Same! I think the lemon juice and the egg white reacted together before I got the chance to shake it.
