Ingredients:
34 oz Don Q Cristal Rum
13 oz Rhum Clément Blanc 40%
14 oz La Fee Parisienne absinthe
12 oz Lime juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (US)
13 oz Chilled water chilled
3 drop Difford's Saline Solution

How to make:

  1. Select and pre-chill a Nick & Nora glass.
  2. Prepare garnish of lime wedge.
  3. SHAKE all ingredients with ice.
  4. STRAIN into chilled glass.
  5. Garnish with lime wedge.

Review:

It's surprising both how much absinthe you can use in this bite-sized cocktail and then how much sugar is needed to tame it. Hit the balance and all these huge flavours play together harmoniously.

History:

Adapted from a cocktail made for me in September 2022 by Nate at Lulu White bar in Paris, France. Nate used a blend of light white rum and Clarin Communal Rum telling me this funky rum was key to balancing the huge favours of the absinthe. In an effort to keep my back bar in check, I used rhum blanc agricol for my funk.

Agreed. I’ve increased the measures by 1.5 times to add much need volume.

Still found it a bit sweet. Added some daiquiri bitters, but would consider leaving out the sugar syrup entirely if I wanted a more sour cocktail. I would have used Clarin, but my bottle is getting low and it is hard to get here in San Diego.

It's a pretty small drink. We doubled everything, which takes it to only two standard drinks. A lovely, beautifully balanced daquiri.

Anything with rhum Agricole and Absinthe is perfect for me. This is amazing. Nicely tart with the wonderful tastes of the rum/rhum. The absinthe adds exotic herbal hints.

Didn’t have any rhum agricole, but substituted cacahça and it was still a wonderful, balanced, absinthe-forward drink. Absinto daiquiri, perhaps?
