¹⁄₃ fl oz	Egg white (pasteurised) or 3 dash Fee Brothers Fee Foam cocktail foamer

How to make

Glass

Prepare

Select and pre-chill a COUPE GLASS.
Prepare garnish of skewered chocolate treat.

Method

SHAKE all ingredients with ice and strain back into shaker.
DRY SHAKE (without ice).
FINE STRAIN into chilled glass.

Garnish

Garnish with skewered chocolate.

I used Bailey's chocolate cream liqueur and did not find it overpowering either. The chocolate and tequila were balanced, but nothing too exciting. Good base though to experiment with to increase the chocolate cream liqueur based cocktail repertoire.

Maybe my choice of chocolate cream liqueur - Cornish Lust, or Cornish Dream, whichever their chocolate flavour is - makes it different to Mr. Szczupal. There's a nice agave flavour behind the chocolate cream, albeit subtle.

It is very one-dimensional. It's very monotonous. It lacks something to break the egemony of the Mozart which is overpowering to the point of being bored quickly.
