Ingredients:
1 12 oz Torabhaig Peated Single Malt Whisky
56 oz Disaronno amaretto
2 12 oz Thomas Henry Ginger Ale
× 1 1 serving

How to make:

  1. Select and pre-chill a Highball (max 10oz/300ml) glass.
  2. Prepare garnish of ginger biscuit balanced across rim.
  3. POUR all ingredients into ice-filled glass.
  4. Briefly STIR.

History:

I named this riff on the Loch Almond after Knock Castle, also known as Caisteal Chamuis (Castle Camus), the former stronghold of the MacDonalds. Now in ruins, the castle stands on the east coast of Sleat, some five miles north of Armadale on the Isle of Skye.

I used a really pedestrian amaretto and this was still magnifico. Having just made the Loch Almond, my idea of adding 2 dashes of ginger bitters paid off in this one. Do what you wish.

Islay whisky, amaretto and ginger ale are thugs who are used to being the main event. But in this case, they all play nicely together and everything is good.
