Ingredients
7 fresh Mint leaves
2 fl oz Hayman's London Dry Gin
3/4 fl oz Lime juice (freshly squeezed)
1/2 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
2 drop Saline solution (20g sea salt to 80g water) or merest pinch of s (optional)
1/3 fl oz Thomas Henry Soda Water (optional)

How to make

Glassware

Serve in a Coupe glass

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare mint leaf for garnish.

Method

  1. Gently MUDDLE mint in base of shaker (just to bruise).
  2. Add next 4 ingredients and SHAKE with ice.
  3. FINE STRAIN into chilled glass.
  4. TOP with chilled soda from a bottle/can or just the merest squirt from a chilled soda siphon.

Garnish

  1. Garnish with mint leaf.

This was my cocktail tonight, I omitted the Soda water, upped the lime juice to 25ml , shake shake shake, into a Nick n Nora chilled glass and it was just utterly perfect.
