Serve in an Old-fashioned glass
1 2⁄3 oz | Light white rum (charcoal-filtered 1-4 years old) |
5⁄6 oz | Galliano Espresso Coffee liqueur |
1⁄6 oz | Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup) |
5⁄6 oz | Double cream / heavy cream |
Garnish: Dust with freshly grated nutmeg
STIR first 3 ingredients with ice and strain into ice-filled glass. Carefully FLOAT lightly whipped cream (shake sealed cream container before pouring).

A White Russian based on rum rather than vodka. Tends to be better with a charcoal-filtered light white rum rather than a more characterful golden rum. Depending on how dry your coffee liqueur is, and your palate, you may prefer to omit the sugar syrup or increase the measure.

I really like an easy and delicious 3 ingredient cocktail - and this fits! I used Pusser's and Cafe Granita, and this was plenty sweet - no need for syrup. Shaken cream on top - delicious. I think Kahlua (the U.S. 20% ABV) would work great, and so would Tia Maria. Mr. Black would likely need some syrup. Serve this instead of a white Russian!
