Please can someone give me some advice. I don't have Amaro Nonino, but I do have Amaro Montenegro and Amaro Averna. Which one would be better as a substitute in this cocktail?

Hi James, they’re both quite different to Amaro Nonino but of the two the Averna is closer.

Very delicious Manhattan variant - similar to a sweet Manhattan, or a High Ryeser - except the applejack provides a leading apple flavor note. Excellent, but sweet, and boozy.

Very good drink, nice for the summer/fall shoulder season. Well balanced.

Only had Dubonnet open on this occasion, which added more wine/claret-like notes compared to standard rouge vermouth. A really wonderful cocktail.

A beautiful autumnal cocktail. Intense, sweet, herbal, warning and bitter, and some wonderful spicy notes from the rye coming through.
I had slightly lower alcohol spirits : Sazerac rye and Avallen Calvados, so bumped up the latter to 35ml , and throttle back to rouge vermouth to 20. Could potentially even go 40 on the avallen.
Another delicious use for nonino apart from a paper plane!
