Serve in a Sour or Martini/Coupette glass

Ingredients:
1 23 oz Del Maguey Vida Clásico Mezcal
34 oz Lime juice (freshly squeezed)
12 oz Agave syrup
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
4 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Sour or Martini/Coupette glass.
  2. Prepare garnish of lime zest twist and lime wedge.
  3. REGAL SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice) to emulsify.
  5. FINE STRAIN into chilled glass.
  6. Express lime zest twist over cocktail and discard.
  7. Garnish with lime wedge on rim.

Simple perfection. We do a quarter rim of chilli and lime salt for those who have the ears to hear the waves pushing up the shore.

Made as directed, very nice cocktail. Casamigos Joven Mezcal. Not sure how that compares as I don’t drink a lot of Mezcal.
