8 fresh Basil leaves
1 1/2 fl oz Irish whiskey
3/4 fl oz Lemon juice (freshly squeezed)
1/2 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
1 1/2 fl oz Fiol Extra Dry Prosecco

Prepare

  1. Select and pre-chill a DOUBLE OLD-FASHIONED GLASS.
  2. Prepare garnish of basil leaf.

Method

  1. MUDDLE basil in base of shaker.
  2. Add next 3 ingredients (all but sparkling wine) and SHAKE with ice.
  3. FINE STRAIN into chilled glass.
  4. TOP with prosecco and briefly stir.

  1. Garnish with basil leaf.

Perhaps a slightly less characterful kissing cousin of the Gin Basil Smash. Nonetheless, very refreshing with the bubbles included.

Coming at this again, and on the assumption that it is a child of the Gin Basil Smash, we think that the nut has fallen too far from the tree. So we now make it according to the simplicity of its parent: 12 basil leaves; 60ml Irish Whiskey; 22.5ml lemon juice; and 10ml sugar syrup. Have some fun with egg white if you wish.
