Ingredients:
1 12 oz Rémy Martin V.S.O.P. cognac
34 oz White crème de cacao liqueur
12 oz Cockburn's Tawny Eyes Port
13 oz Fig liqueur (crème de figue)
13 oz Lime juice (freshly squeezed)
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
2 drop Orange blossom water / Orange flower water
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of white chocolate & fig.
  3. SHAKE all ingredients with ice.
  4. STRAIN into chilled glass.

Jay explained the origins of this drink as follows, "Whilst on holiday in the south of France this summer I discovered a fig tree growing on the riverside near our Chateau. During dinner, my family challenged me to make a drink with the figs. I raided the cupboards and found Martell VSOP, chocolate liqueur, tawny port and drinking chocolate. The rest is History! I hope you enjoy it!"

Oh my word - this is decadent and absolutely delicious. The port, chocolate and figs combine to give a rich flavour of sour morello cherries, even though there aren’t any. It’s something you feel you ought to be sipping in a very grand old, wood-panelled library. Quite splendid.
