Review:

There's a lot of Daiquiri going on in this very tasty vodka-based cocktail – indeed so much that we couldn't help trying the same drink with a rum base - a Pineapple Daiquiri.

I went with a variation on the approach from Laurent but used grapefruit bitters instead which I think cut the sweetness just enough. Delicious and refreshing at the same time. Will try the rum version next time.

I went a bit cheffy with this cocktail (very nice btw) and chargrilled my pineapple garnish (with one of those kitchen blowtorches) and placed it in the drink instead of the rum. Gave it a nice subtle smokiness to the drink which really set it off nicely.

Très bon cocktail ! Je n'avais pas de liqueur d'ananas ni d'amer tiki, j'ai donc remplacé ces deux ingrédients par une liqueur de sureau(St Germain) & trois tirets d'angostura.

I first made this last week ( without the Tiki bitters as I can´t get any here ) and loved it. Your advice on using freshly made pineapple juice was spot on. Thank you Mr Difford.
