Serve in a Martini glass

Ingredients:
1 2⁄3 oz Caribbean blended rum aged 6-10 years
1⁄2 oz Disaronno amaretto
1 1⁄2 oz Pineapple juice
× 1 1 serving

How to make:

  1. Select and pre-chill a Martini glass.
  2. Prepare garnish of pineapple wedge.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.

Does anyone know the origin of the name of this cocktail? I’m wondering if it has any relation to the Robert Redford/Gene Hackman film of the same name?

I planned to follow the suggestions by upping the rum to 2 full oz and adding half a spoon of lemon juice, but unfortunately my rum of choice El Dorado 8 years only yielded 1.5 oz (the bottle almost empty) so I topped it with an additional half oz with pusser's navy rum. Made a very pleasant and quite dry tipple with the rum notes dominating with a fruity and nutty backbone.

Outstanding. Adding more rum makes this better.

Used 75 ml Myer's, 25 ml Amaretto, 40 ml Pineapple juice and one dash of Angostura Aromatic bitters.

I used an infinity rum I made instead of the aged rum here, and this drink is a good one to use it in. My infinity rum has a mix of white, gold, aged, pot-still, and overproof rums, and it's around 45% ABV.

I also added some Abbott's bitters because I think they work well with amaretto. I think I'll give the more rum and less pineapple idea folks have suggested next time.

Made this cocktail with both Jamaican and Black Seal. Each drink has unique, desirable characteristics. Found both cocktails to be flavorful, balanced and refreshing.

needs more rum and some more balance. See if this hits you all better.

First time I did it with 1 3/4 ounces of El Dorado 8 yr. It was very good. Would make a great pool-side drink, but still a bit of a sweet drink. Second time I added about 1/2 a teaspoon fresh lemon juice to try to balance it. It was much better with the lemon juice seemed a bit more balanced. Can still taste Rum and Amaretto but not as sweet a finish.

I have mixed feelings about this cocktail. On the one hand, it's pretty tasty, sweet, and very easy to drink. On the other hand, it's not very interesting, and is dangerously easy to drink. The pineapple really dominates, such that it tastes like you're drinking pineapple juice with a splash of rum, and the rum is so hidden that it tastes more like a gulper than a sipper. I can easily see someone drinking several of these in an hour and then wondering what hit them.

In revisiting this cocktail, I found I like bumping up the rum to 1.75 oz or 2 oz - it helps temper the sweetness of the pineapple with a stronger rum presence, and actually brings out more of the amaretto flavour.

This cocktail also benefits from more age on the rum, such that El Dorado 8 or 12 year work much better than 5.
