6 fresh Sage leaves
1 1/2 fl oz Del Maguey Vida Clásico Mezcal
1/2 fl oz Liquore Strega
1/2 fl oz Lustau Jarana Fino Sherry
3/4 fl oz Lemon juice (freshly squeezed)
1/2 fl oz Honey syrup (3 parts honey to 1 water by weight)
4 drop Hot pepper sauce (red, vinegar-based e.g. Tabasco)
1 dash Orange Bitters by Angostura
3 drop Saline solution (20g sea salt to 80g water) or merest pinch of s

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of fresh sage leaf..

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

  1. Garnish with fresh sage leaf.

This was well thought out, I had Illegal Mezcal and Amontillado Sherry, the honey worked great with the Strega and lemon juice and the 4 drops of hot sauce and salt grains worded magic. The sage accented the smokiness of the Mezcal. I thoroughly enjoyed it...Salute'

Very solid drink, but I would recommend adjusting appropriately based on the character of your mezcal. A full 1.5 Oz of Del Maguey Vida really took over the drink, masking the subtler Strega and sherry elements. I think it would have benefited from splitting that base with a blanco tequila. With the less forward Dos Hombres, however, the modifiers came through more clearly, and produced a more harmonious drink.

I don't know where that Dod Hombres mention came from, I don't even own that bottle. What I used was Gracias a Dios (which is delicious).
