Ingredients:
2 oz Jamaican aged blended rum with funk
14 oz Strucchi Red Bitter (Campari-style liqueur)
14 oz Luxardo Maraschino liqueur
34 oz Lime juice (freshly squeezed)
12 oz Pineapple juice
12 oz Monin Passion Fruit Syrup

How to make:

  1. Select and pre-chill a Collins glass.
  2. Prepare garnish of pineapple wedge and parasol-skewered Luxardo Maraschino Cherry, and edible orchid flower.
  3. SHAKE all ingredients with ice.
  4. STRAIN into glass (or tiki mug) filled with crushed ice.
  5. Garnish with pineapple wedge and parasol-skewered maraschino cherry, and edible orchid flower.
  6. Serve with a straw.

History:

Adapted from a recipe created circa 2016 by Paul McGee, this was the signature cocktail at his Lost Lake bar in Chicago, Illinois. (Paul's original recipe call for Appleton Signature rum.)

This is a nicely balance and easy Tiki sipper - Campari reigns in the sweetness without overexerting bitterness.

Summer in a glass. We substituted Chinola Passionfruit Liqueur for the passionfruit syrup...better for us.
