Ingredients:
1 oz Hayman's London Dry Gin
1 oz Licor 43 Original liqueur
23 oz Lustau Jarana Fino Sherry
13 oz Lime juice (freshly squeezed)
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of lime wedge.
  3. SHAKE all ingredients with ice.
  4. STRAIN into ice-filled glass.
  5. Garnish with lime wedge.

Really interesting drink with a lot of layers of flavour. Sweet and sour, a great cocktail.

I enjoy this cocktail very much. It's an unusual combination of flavors which come together unexpectedly. And I'll make it unanimous regarding the lime: I'll definitely bring that down next time.

Fine little drink - no pretending. I do agree, a little less lime is more to this drink. I used 30, 30, 20, and only 10 ml lime.

Drinking this now, having just made it for the first time (exactly as per the recipe). It is hot and humid right now and this was a very pleasant drink. It's tart. It did seem quite short (i.e. I'd have liked more of it, which is always a good if somewhat dangerous sign). I'll knock the lime back a bit next time though (or perhaps scale up the other ingredients) as it does dominate the flavour.
