12 fl oz Chilli liqueur
34 fl oz Lime juice (freshly squeezed)
12 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
12 fl oz Claret wine (Bordeaux red)

How to make

Glass

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of lime wedge.

Method

  1. SHAKE first 4 ingredients with ice.
  2. FINE STRAIN into chilled glass.
  3. Carefully FLOAT wine.

Garnish

  1. Garnish with lime wedge on rim.

My favourite Devil's Margarita and as much as it may sound heretic, my favourite take on a New York Sour. The chilli interacts so well with the wine, the fruitiness and spice (I did use Ancho Reyes standard) of the Ancho chillis combines with the tannins and the red, plummy fruit of the Claret.

A wonderfully decadent Margarita...substituting Agave for the Simple syrup made it more so for us.

Absolutely loving this! Enough chilli to ensure the requisite kick, but the red wine seems to couple with the sugar syrup to balance it. My favourite use of Ancho Reyes so far.
