Glass:

Ingredients:
1 12 oz Del Maguey Vida Clásico Mezcal
13 oz Orange Curaçao liqueur
13 oz Chilli liqueur
13 oz Ginger liqueur
13 oz Pineapple juice
1 oz Lime juice (freshly squeezed)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer
× 1 1 serving

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare dust garnish made with an equal mix of powdered sugar, salt and cayenne pepper.

How to make:

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into chilled glass.

Garnish:

  1. Dust with pre-mixed sugar, salt and cayenne dust.

Adapted from a recipe created in 2018 by Melissa Yard at Joséphine Wine Bar, Charleston, South Carolina, USA. The original calls for homemade pineapple jalapeño syrup and omits chili liqueur.

This definitely benefits from the addition of 5ml simple syrup to bring everything into a lovely balance.
