Serve in a Martini glass

Ingredients:
1 12 fresh Passion fruit (fresh)
2 oz Ketel One Vodka
13 oz Strucchi Bianco Vermouth
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
16 oz Monin Passion Fruit Syrup
4 drop Bob's Vanilla bitters optional
3 drop Saline solution 4:1 (20g sea salt to 80g water) optional
× 1 1 serving

How to make:

  1. Select and pre-chill a Martini glass.
  2. Prepare garnish of passion fruit half.
  3. Cut passion fruit in half and scoop out flesh into shaker.
  4. Add other ingredients.
  5. SHAKE with ice.
  6. FINE STRAIN into chilled glass.
  7. Float the remaining passion fruit half for garnish.

Too tart, and that's with adding extra passion fruit syrup. Maybe it's due to the passion fruit, however.

Update: made it with Indian passionfruit and upped the syrup. Absolutely delicious now! The passion fruit just comes through so much better!
