You don't get much cherry except on the back end. It's mostly a Jamaican OP sour, yet not. It's got a fun saline note despite not having any salt in it. I used 2:1 demerara syrup and couldn't really tell that it was there. Overall it was nice, but not very complex. I do love S&C though and it's nice to try it in different drinks.
Hello Simon. For some of us Rum is complicated and sometimes confusing. So when you say in your recipe "Jamaican-style overproof aged pot still rum" and don't link that reference to specific products, we haven't the faintest idea what you are referring to. What are you referring to?

The most common examples in this category is Hampden 7 year and Smith&Cross. I like S&C, Difford likes Hampden 7.
Wonderfull cocktail, filling and pleasantly funky rum taste at start and end with descrete cherry in the middle, love it.
I used 20 ml wray & nephew overproof rum, 20 ml hampden 8 yr and 10 ml pusser's rum gunpowder proof.
Used 1 oz Plantation OFTD + 1/2 oz Bacardi Gold since the OFTD is 69%. Decided to sub orgeat in for the simple syrup and found that it complements the cherry beautifully.
Great Rift on a daiquiri in my opinion. I see everyone using Smith and cross ... Try some Doctor Bird to level up yur funk. Great for mid to mid high ester rum. For example, Hampden Rumfire would overpower this.
Each palate is different of course, but in a side by side comparison of these specs with S&C vs Dr. Bird, I found Dr. Bird overwhelmingly overtook the drink.
