10 fresh Raspberries
2 fl oz Hayman's London Dry Gin
12 fl oz Giffard Crème de Framboise
1 12 fl oz Lemon juice (freshly squeezed)
12 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
3 dash Orange Bitters by Angostura (optional)
34 fl oz Thomas Henry Soda Water

How to make

Glassware

Serve in a Collins glass

Prepare

  1. Select and pre-chill a COLLINS GLASS.
  2. Prepare garnish of skewered raspberry and lemon slice wheel.

Method

  1. MUDDLE raspberries in base of shaker.
  2. Add next 5 ingredients (all but soda) and SHAKE with ice.
  3. FINE STRAIN into ice-filled glass.
  4. TOP with soda and briefly stir.

Garnish

  1. Garnish with skewered lemon slice wheel and raspberry (sail).

Review

A popular modern-day adaptation of the classic Collins with a whopping 45ml (1½oz) of lemon juice, yet is far from being overly sour. (I've tried reducing the lemon and rebalancing with less sugar but the result is a lesser cocktail.)

I tried making this cocktail with and without fine straining and I personally preferred making this by fine straining, since you don’t get little bits of raspberry getting sucked up through the straw, since I can be picky with fruit sometimes, but both ways work fine and overall this cocktail is pretty good
