Review:

A fruity late-night cocktail to sip and contemplate. Drinking beer locally brewed from locally grown malt and hops is a very sustainable way to drink. Due to their use of ice and ingredients sourced from much further afield, cocktails are not. However, while beer is a daily staple, cocktails are a special celebratory and luxurious treat. The quest to save the planet is surely worthy of celebration, although to quote another, "All the promises will be nothing but blah, blah, blah..."

I’ve just made this with Calvados instead of cognac (because I don’t have any cognac at the moment, but I do have a lot of freshly picked blackberries) - apple and blackberry is a classic combination and I’d definitely recommend it here, although it doesn’t fit as well with the name!
