Ingredients:
1 oz Rémy Martin V.S.O.P. cognac
23 oz White overproof rum (unaged Jamaican/funky)
34 oz Lime juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
1 fresh Lime zest (peel)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lime wedge.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with lime wedge on rim.

History:

Adapted from a recipe created in late 2022 by Dor Ohana, a bar manager and bartender's school teacher in Tel Aviv, Israel. Dor's original recipe calls for a whopping 30ml (1oz) Overproof Jamaican rum and a "fat ½oz" sugar syrup.

A very tasty riff on the classic daiquiri, the spirits does indeed compete evenly for your taste buds. Might try to reduce the sugar next time to make it more spirit forward.

Use Hamilton 151 Demerara rum and half the sugar syrup. Very nice spirit forward cocktail. Glad I chose the rum I did as I felt it added more complex flavours than the white overproof would have provided. Did do a long shake to make the cocktail very cold.

interesting take on daiquirim for a moderate drink try 20ml syrup and a dash of bitters

A very boozy cocktail with the Cognac upfront and the over-proof rum providing a nice kick at the end (used Lemon Hart 151 rum). This pushed my limit on the sweetness however. If you prefer less sweet cocktails, I would recommend you decrease the rich syrup to 1/4 oz/7.5 ml. Fit perfectly in a Nick and Nora glass.
