Ingredients:
1 23 oz Light gold rum (1-3 year old molasses column)
1 12 oz Strucchi Dry Vermouth
1 13 oz Pineapple juice
16 oz Monin Grenadine Syrup
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of dehydrated pineapple slice wheel.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with dehydrated pineapple slice floated on surface.

SUNSHINE COCKTAIL
Equal parts pineapple juice, dry vermouth, white rum. Dash of Grenadine. Stir with cracked ice

Harry Craddock includes two "Sunshine" cocktails in his 1930 The Savoy Cocktail Book, the other being Sunshine Cocktail No. 2.

SUNSHINE COCKTAIL No. 1.
1 Dash Angostura Bitters.
1/3 Italian Vermouth.
2/3 Dry Gin.
1 Lump of Ice.
Stir well and strain into medium size glass. Squeeze orange peel on top.

Really simple, but really good! Great botanical, herbaceous vermouth suprisingly combining so well with pineapple and rum.

I didn't find this terribly sweet, but it has a nice velvety mouthfeel, with a lot of vermouth flavor. The rum recedes into the background. Generally a nice easy drink.

I used a fairly low quality gold rum, Dolin and homemade pomegranate syrup and didn’t find it particularly sweet. The vermouth dominated with the pineapple in the background. Certainly easy drinking and went down quickly on a hot night. Maybe could do with some bitters or something (maybe a different garnish?) to add a little bit more dimension.

We used half gold rum and half 151 Demerara rum to tone back the sweetness. Still a bit sweet, but wonderful on a warm afternoon.
