1 oz Rémy Martin V.S.O.P. cognac
1 oz Poire William eau-de-vie
Top up with Brut champagne/sparkling wine

How to make:

STIR first 2 ingredients with ice and fine strain into chilled glass. TOP with sparkling wine.

This one is calling (loud) for a sugar cube coated in some bitters, maybe Boker's or vanilla, cinnamon or the like.

Very interesting. You can taste the cognac and the hint of pear. A bit on the dry side. Worked perfectly as an aperitif, but I think it may be too dry to serve as a brunch cocktail.
If you wanted to serve at a brunch, I would add some Apple Schnapps.
