1 12 oz Hayman's London Dry Gin
34 oz Hayman's Sloe Gin
1 oz Pink grapefruit juice (freshly squeezed)

How to make:

MIST chilled glass with spray or rinse of absinthe to coat the inside and set aside. SHAKE other ingredients with ice and fine strain into absinthe-rinsed chilled glass.

Review:

Actually, a shade of orange-red rather than green, the name is a reference to the absinthe in this unusual combination of ingredients. The absinthe-rinse is a subtle addition to the Rosy Deacon but propels this classic into a more interesting place.

Created in 2009 by Jim Meehan at PDT in New York City, USA, this is a riff on the Rosy Deacon in Stanley M. Jones' 1977 Jones' Complete Barguide.

On first taste, there was a strong vegetal flavour which softens as the cocktail breathes. A little on the bitter side, so it is perfect as an aperitif. Enjoyed with some organic goat cheese and wholemeal crackers.

White grapefruit juice may be trash in this. I also used Gordon's Gin, not wanting to deplete my Junipero... Give it a few moments to let the flavors meld but, no, pink grapefruit juice is calling... Heed its call. (8 Jun 2022, 2:56p)
