Serve in an Old-fashioned glass

Ingredients:
2 oz Caribbean blended rum aged 6-10 years
13 oz Lustau San Emilio Pedro Ximénez Sherry
14 oz Demerara/Muscovado/brown sugar syrup (2 sugar to 1 water)
1 dash Angostura Aromatic Bitters
× 1 1 serving

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of orange zest twist.
  3. STIR half the rum with two ice cubes in a chilled glass.
  4. Add PX sherry, sugar syrup, bitters, and two more ice cubes.
  5. STIR some more and add another two ice cubes and the rest of the rum.
  6. STIR some more and add more ice.
  7. EXPRESS orange zest twist over the cocktail and use as garnish.

Made this with Bacardi 8 & Lustau San Emilio PX Sherry. Rich, but tasty. I find PX Sherry to be a bit too rich sometimes, so this is a nice option to use it in a more subtle manner.

I'm American - I have no idea what "treacle" is supposed to taste like. This cocktail is sweet, syrupy and laden with funky rum notes - excellent! I can enjoy one as a nice dessert, but that is it - it is very sweet.

Superb night time cocktail. Sweet, but spirit forward. Does takes like treacle, but with a bit more spice and not as much sweet. Perfect.
