How to make:
STIR half of the rum, sugar syrup and bitters with two ice cubes in glass. Add rest of rum, another couple of ice cubes and STIR again. Fill glass with ice and STIR again. Finally FLOAT apple juice.
2 fl oz | Jamaican-style overproof aged pot still rum |
1/4 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix) |
1/2 fl oz | Apple juice (cloudy & unsweetened) |
2 dash | Angostura Aromatic Bitters |

History:
This twist on the Old-Fashioned was created by Dick Bradsell in the 1990s' London. Like the original, it takes a few minutes to make and there are no shortcuts. The apple juice Dick originally used is the cheap clear stuff rather than the posh pressed cloudy apple juice. In this drink, cheap is best.
