Serve in a Coupe glass

Ingredients:
2 oz Rémy Martin V.S.O.P. cognac
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
1 fresh Egg (white & yolk)
× 1 1 serving
Read about cocktail measures and measuring

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of grated nutmeg.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice) to emulsify.
  5. FINE STRAIN into chilled glass.
  6. Garnish with dusting of nutmeg grated over cocktail.

Really wish this was linked to other Flip recipes as a whole category. Cognac is great but Rum flips are a step somewhere else. No dry shake here?

Agreed, better with a dry shake and I've added this above. We have 5 rum flip recipes - to find them, please use our Cocktail Finder. Enter "Flip" as the key word and under spirits, select "rum all styles."

Overflowed out of my coupe glass. But it is delicious nevertheless. Fantastic dessert/nightcap cocktail.

Use a larger coupe glass than normal. The recipe does not dictate egg size. Larger eggs may need a extra dash of brandy. I could never get a flip to fit into a Nick and Nora glass, so it doesn't seem unusual to need a slight glassware upgrade.

Extremely decedent. Maybe use a little less syrup unless you're going for a dessert in a glass to put you in a food coma. Used a pasteurised egg because that's all I've got, seemed to do the job.

Yum, my grand father called it an äggtoddy/aeggtoddy (Swedish ...) old classic, thank you for the reminder. Wil make one now but with whisky ;)

An absolute convert to a flip. The Fumigator was a gateway - to 'use up some cherry brandy' - and this feels like going back to a true flavour. So easy to drink and impressive to serve. Delicious.

The same volume of pasteurized egg should be fine. Be good to know how it works out?
